| | | | We know you don't come on the river just for the food. But, we serve GREAT FOOD, and the Hughes Crew takes incredible pride in the preparation, quality, abundance, and presentation of fantastic river meals. Large ice chests allow us to provide fresh meats, fresh fruits & vegetables, and dairy products throughout your trip. Plan on terrific FOOD, and plenty of it. Dutch oven baking is a specialty, and each evening Dutch ovens are stacked 4 to 7 ovens high with glowing coals. We are pleased to accommodate dietary restrictions. Below we've listed various meals that are standard fare on Hughes trips.

- bbq chicken & pork ribs, corn on the cob, coleslaw, baking powder biscuits, double layer chocolate cake with raspberry jam between layers and luscious chocolate frosting, hors d'oeuvres (steamed artichokes with dip)
- thick cut steaks & shrimp, Dutch oven potatoes, Caesar salad, mushrooms & onions, French bread, hors d'oeuvres (crackers, cheese, salami), fruit cobbler.
- King or sockeye salmon, cornbread, pasta/veggies/sauce, wilted rough leaf salad, hors d'oeuvres (corn chips, cream cheese/clam dip, veggies), iced double layer carrot cake
- Marinated thick cut pork chops, brown beer bread, stir fry with thumb sized shrimp, white rice, hors d'oeuvres (Dutch oven nachos), pineapple upside down cake
- Dutch oven Rock Cornish Game Hens with wild rice, steamed veggies, baking powder biscuits, green salad, hors d'oeuvres (veggie spring rolls with hot peanut sauce), fruit cobbler
